A butter board is the lowest-effort appetizer that still looks like a styled table: soft butter, a few toppings and warm bread. We make ours small, on an 8-inch marble board, and keep a Butter Bell on the counter so there's always soft butter ready.

Why a small board

A big butter board looks great for five minutes and then turns into a smeared mess. An 8-inch round holds one stick, which is about right for 4 to 6 people with bread, and it looks deliberate instead of leftover: swoops of butter, a few toppings and a lot of white marble showing.

How to style it

Think of it as a still life you can eat.

  • Leave a border. Keep the butter an inch in from the edge so the marble frames it.
  • Top in layers, not piles: honey first, then zest, then herbs, then salt last so it stays crunchy.
  • Bread on the side, on a linen napkin or in a basket, not on the board.
  • Put the Butter Bell next to it with plain butter for refills. It also tells guests the butter is meant to be shared.

The recipe

Butter Board with Honey, Lemon and Flaky Salt

One stick of soft butter on an 8-inch marble board, topped with honey, lemon zest, pistachios and herbs. Serves 4 to 6 with warm bread.

Ingredients

  • 1/2 cup (1 stick) good salted butter, softened
  • 1 tablespoon honey (or hot honey)
  • Finely grated zest of 1/2 lemon
  • 1 tablespoon shelled pistachios, toasted and chopped
  • 1 teaspoon fresh thyme leaves or finely chopped chives
  • Pinch of crushed red pepper flakes
  • 1/2 teaspoon flaky sea salt
  • Warm baguette or crusty bread, sliced, for serving

You'll need

  • 8-inch round marble board
  • Small offset spatula or the back of a spoon
  • Butter Bell crock (optional, for soft butter on demand)

Method

  1. Soften the butter until it spreads easily: 30 to 60 minutes on the counter, or use butter that's been living in a Butter Bell.

  2. Spoon the butter onto the board and spread it in loose swoops with the back of a spoon, leaving about an inch of marble showing around the edge.

  3. Drizzle with the honey, then zest the lemon right over the top.

  4. Scatter the pistachios, herbs and red pepper flakes. Finish with the flaky salt.

  5. Serve right away with warm bread and a small spreader, with the Butter Bell alongside for refills.

Notes

Butter Bell. The crock holds about one stick (125 g). Pour 1/3 cup of cold water into the base, pack the bell-shaped lid firmly with softened butter and set it back in the base. Butter Bell says to change the water every 2 to 3 days.

Protect the marble. Marble is porous: butter can leave dark spots and lemon juice can etch it. Zest only (no juice on the board), and wash the board with warm soapy water as soon as the party's over, or line it with a round of parchment.

Make ahead. Toast the nuts up to 3 days ahead. Spread and top the butter no more than an hour before guests arrive.

Leftovers. Plan for it to be eaten within about 2 hours. Throw away butter that's been on the board (bread has been through it); don't scrape it back into the crock.

What we used

Round white marble board, 8 inch

Just big enough for one stick of butter with an inch of marble showing around it, which is what makes it look deliberate.

    Butter Bell crock, ivory matte

Keeps about a stick of butter soft on the counter, sealed by a little cold water in the base, so the board takes ten minutes, not an hour.

Questions people ask

Is a butter board sanitary?

It is if guests use the spreader instead of swiping bread through the butter. Set out sliced bread and a small knife, keep the board small so it's finished in one sitting, and don't save what's left.

Salted or unsalted butter?

Salted, or unsalted plus a little extra flaky salt. A cultured, European-style butter tastes best here.

How far ahead can I make it?

Up to an hour. Any longer and the toppings sink into the butter and the zest dries out.
